Cecil's Chili for the Chilly
Ingredients:
- Ground Beef - 1 lb
- Pork Sausage - 1/2 lb
- White onion (diced) - 1 small
- Green Pepper (diced) - 1/2
- Jalapeno (minced) - 1
- Chili beans - 2-15 oz cans
- Black beans - 1-15 oz can
- Tomato sauce - 1-15 oz can
- Fire-roasted Diced Tomatoes - 1-15 oz can
- Cecil's Secret Sauce - 2 c
- Penzey's Chili 3000 - 5 TBSP
- Chili Powder - 2 TBSP
- Red Pepper Flakes - 1 tsp
- Salt & Pepper - (to taste)
- Shredded Cheddar Cheese - (for garnish)
- Sour Cream - (for garnish)
Instructions:
Heat a large stock pot over medium-high heat and brown the ground beef and pork sausage. Drain off the excess grease and add the diced onion, green peppers, and jalapeno. Saute for 1-2 minutes and add the black beans, chili beans, tomato sauce, fire-roasted diced tomatoes, and Cecil's Secret Sauce. Season with Penzey's Chili 3000 (or other favorite chili seasoning), chili powder, and red pepper flakes. Reduce heat to low, and simmer for at least two hours.
Meanwhile, prepare your bread bowls by cutting about a quarter of the top off. Carve out the innards, leaving about a 1/2 in to 3/4 in thickness.
Once the chili has simmered for two hours, season with salt and pepper to taste. Ladle into bread bowls and top with shredded cheddar cheese and a dollop of sour cream. Enjoy!
