Cecil's Chicken BBQ Pizza
Ingredients:
- Your favorite pizza dough - (ready for use!)
- Chicken Breasts (1 in cubes) - 1 to 1-1/2 c
- Cecil's Secret Sauce (divided) - 1/2 c
- Canned Pineapple or Fresh pineapple (1 in cubes) - 8 oz
- Small Red Onion (thinly sliced) - 1/3
- Jalapeno (thinly sliced) - 1/2
- Garlic - 1 clove
- Smoked Gouda Cheese (thin, 1/2 in slices) - 1/2 c
- Monterey Jack Cheese (shredded) - 1 c
- Hot Pepper Infused Oil - 2 TBSP
Instructions:
Start by preheating your oven to 400 degrees Fahrenheit. Make up a batch of your favorite pizza dough recipe. If using store-bought dough, let it rest for 20-30 minutes in a warm environment so it can reach room temperature.
Peel most of the paper from a clove of garlic and cut about 1/4 of the top off to expose each clove. Set the clove on a sheet of aluminum foil and drizzle with 1 TBSP of olive oil. Seal the foil around the clove and cook for about 30-40 minutes, or until garlic is soft enough to squeeze from the garlic casing easily. Set aside.
Toss the cooked, cubed chicken in a small bowl with 1/4 c of Cecil's Secret Sauce. Set aside.
Spray a pizza pan with nonstick cooking spray. Unroll your pizza dough, starting from the center and working your way outward until you have reached the edge. Spread the remaining 1/4 c of Cecil's Secret Sauce around the dough, leaving 1/2 inch of the edge as exposed crust. Spread the cubed chicken, roasted garlic, pineapple, red onion, and jalapeno evenly around the pizza. Top with shredded monterey jack cheese and smoked gouda slices. Drizzle hot pepper infused oil over the top of the pizza. Cook for 15-20 minutes, or until crust is golden and cheese is melted.
