Cecil's Bacon-Wrapped Scallops
If you're looking for some little morsels that will change the life of your party, then look no further than Cecil's Scallops Wrapped in Bacon. Ingredients:
- Daily's Hardwood Smoked Peppered Thick Sliced Bacon - 1 slice per scallop (about 15-20)
- Cecil's Secret Sauce - 1 bottle
- Fresh Bay Scallops - 1 pound
Instructions:
Start soaking 15-20 toothpicks in a cup of water (one for each scallop, however many you ended up with). Begin by cooking the bacon slices over medium heat in a large fry pan. Cook the bacon just halfway, flipping once. Rest on a paper towel to cool and collect additional grease. Meanwhile, pat your scallops dry and set your oven to broil. Wrap a full slice of partially cooked bacon around each bay scallop and secure with a toothpick through the center. Baste each bacon-wrapped scallop with Cecil's Secret Sauce, and set them on a cookie sheet lined with aluminum foil. Place on top rack in your oven and try to contain your excitement. Once the edge of the bacon has browned, flip the scallops and return them to the oven. After a few more minutes, check that the other side is browned perfectly. Baste them again, lightly, with Cecil's Secret Sauce and watch (or taste) your life change!
